I must admit that I tend to get a little carried away with the number of cookies I make every month on month. It’s as impossible to name all of the reasons we love this coconut cookie, the play of the buttery cookie and nutty coconut is unbelievably good—never too sweet, they’re just exactly what we crave when we want a cookie. I just love the coconut twist in this recipe though. It gives the cookie a chewy texture rather than just being crumbly plus a really lovely flavour too.

The coconut sugar caramel is a pretty handy thing. You will use them to top these coconut thumbprint cookies. These cookies are definitely unique and would make the perfect addition to a tea-time snack. If you want to really load up on coconut flavor don’t be afraid to double the coconut extract or add a few drops to the icing too. I say go big with the flavors!

You don’t need to be celebrating any festive vibes for enjoying the cookies. You can actually fill the center with your favourite frosting, chocolate, Nutella, or jam, it’s all good!

And even though they suit our grown-up palates just fine, the kids love them too.

Ingredients

For the cookies:

1. 2 cups Slurrp Farm Oat Powder

2. 1/4th cup Slurrp Farm Coconut Sugar

3. 1 tsp cinnamon powder

4. 1/4th tsp baking powder

5. 1/4th cup butter

6. 1 tsp vanilla essence

7. 3 tbsp coconut sugar caramel

8. 2 tbsp Slurrp Farm Coconut oil

For the coconut sugar caramel:

1. 1 cup Slurrp Farm coconut sugar

2. 2 tbsp Slurrp farm coconut oil

3. 1/2 cup coconut cream

Instructions

For the cookie dough:

1. Preheat the oven to 180 degrees Celcius.

2. In a mixing bowl add the Slurrp Farm coconut sugar and Slurrp farm oat powder.

3. Add cinnamon powder, baking powder, butter and Slurrp farm coconut oil.

4. Mix all the ingredients well together. (pic 4)

5. Roll each portion into a ball and place 2 inches apart on the prepared baking tray.

6. Flatten (slightly) each dough ball, and then press a deep thumbprint size impression in the center.

For the coconut sugar caramel:

1. Melt the sugar and oil together.

2. Add cream and allow it to cook till the mixture thickens.

3. Assemble.

4. Fill each cookie with 1/2 teaspoon coconut sugar caramel.

5. Bake at 180 degrees Celcius for 12 - 15 minutes.

6. Allow the cookies to cool and serve.
