Healthy Indian snack recipe – Easy savory crepes

Crepes can be made in advance if you like and reheated in a hot pan as needed, or just cook them to order. You can also make the batter up to a day in advance and store it in the fridge.
1. Slurrp Farm Classic pancake mix 2. 1 cup of milk 3. ½ cup of corn 4. 1 cup of chopped spinach 5. ½ cup yogurt 6. 1 tbsp of cream 7. 2 tbsp of butter 8. 1 tsp each salt and pepper 9. ¼ cup of boiled and chopped beetroot 10. ¼ cup of cucumber 11. 1/4 cup of carrot 12. ¼ cup of onion 13. 1 tsp of chopped garlic 14. 1 egg 15. Lettuce 1. Saute chopped garlic and onion in 1 tbsp of butter. Once onion caramelizes, add the corn and stir fry for some time. Add chopped spinach, salt and pepper. Saute for 2 to 3 mins. 2. Add 4 tbsp of milk and 1 tbsp of cream. Stir for 1 to 2 mins and the stuffing is ready 3. Make the batter for crepe by whisking ½ packet of classic pancake mix, 1 egg and 3/4th cup of milk. It should be a thin batter. Brush some butter on a pan and pour a ladleful of batter. Swirl the batter and let it cook on both sides. Make the remaining crepes. 4. Do a half slit on the crepe. Put a spoonful of stuffing in one section and then the salads (cucumber, beetroot, carrot). Top some yogurt on the salad. Put a piece of lettuce and fold the crepe. Ingredients
